Famous Vegan Lavender Banana Bread Recipe

This vegan lavender bread recipe will blow you away!! Not only is is delicious, moist, and full of lavender flavor, it’s so good, that you won’t believe it’s vegan!

Ingredients:
1 tablespoon dried lavender
1 tablespoon lavender extract
6 tablespoons vegan butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla bakers extract
1/2 teaspoon salt
½ cup canola oil
¾ cup plain, vegan yogurt
1 1/2 cups sugar
2 large ripe bananas, mashed

Lavender simple syrup:
1 tablespoon dried lavender
1/3 cup sugar
1/3 cup water

Directions: 

  1. Preheat the oven to 350ºF (or 325 if using a commercial oven). 
  2. Cook the butter and lavender in a pan. Allow to cook for 2 minutes, stirring occasionally. Make sure the butter has completely melted, and then remove from heat and add the lavender extract and bakers extract. 
  3. In a medium bowl, combine the flour, baking soda, and salt. In a separate bowl, mix the oil, yogurt, sugar, infused butter mixture, and bakers extract. Fold in the mashed banana. Gradually fold in the flour mixture.
  4. Pour the batter into the bread pans that have been sprayed with non-stick spray, and lined with parchment paper, and bake for 40 minutes or until a knife inserted in the center of the bread comes out clean. (Note: 20-25 minutes in commercial ovens) – place on middle lower rack.
  5. While the bread is cooking, make the lavender syrup. In a small saucepan on medium heat. Combine the sugar, and water, and stir until sugar has dissolved completely. Add the dried lavender, and cook for about a minute, until you can smell the lavender. Set aside.
  6. Place the bread on the side to cool for 20 minutes.  
  7. Remove bread from pans, and brush the lavender simple syrup over the top of the bread, then over each side. Allow to sit and finish cooling for 15 minutes. 

Makes 1 loaf
