This vegan lavender bread recipe will blow you away!! Not only is is delicious, moist, and full of lavender flavor, it’s so good, that you won’t believe it’s vegan!
Ingredients:
1 tablespoon dried lavender
1 tablespoon lavender extract
6 tablespoons vegan butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla bakers extract
1/2 teaspoon salt
½ cup canola oil
¾ cup plain, vegan yogurt
1 1/2 cups sugar
2 large ripe bananas, mashed
Lavender simple syrup:
1 tablespoon dried lavender
1/3 cup sugar
1/3 cup water
Directions:
- Preheat the oven to 350ºF (or 325 if using a commercial oven).
- Cook the butter and lavender in a pan. Allow to cook for 2 minutes, stirring occasionally. Make sure the butter has completely melted, and then remove from heat and add the lavender extract and bakers extract.
- In a medium bowl, combine the flour, baking soda, and salt. In a separate bowl, mix the oil, yogurt, sugar, infused butter mixture, and bakers extract. Fold in the mashed banana. Gradually fold in the flour mixture.
- Pour the batter into the bread pans that have been sprayed with non-stick spray, and lined with parchment paper, and bake for 40 minutes or until a knife inserted in the center of the bread comes out clean. (Note: 20-25 minutes in commercial ovens) – place on middle lower rack.
- While the bread is cooking, make the lavender syrup. In a small saucepan on medium heat. Combine the sugar, and water, and stir until sugar has dissolved completely. Add the dried lavender, and cook for about a minute, until you can smell the lavender. Set aside.
- Place the bread on the side to cool for 20 minutes.
- Remove bread from pans, and brush the lavender simple syrup over the top of the bread, then over each side. Allow to sit and finish cooling for 15 minutes.
